Super Easy Peppermint Patties

Trust me when I say these will be gone in a flash! Dark chocolate and peppermint is always a hit during the holidays, so whip these up and keep them in the freezer until ready to serve. They’re free of the top 8 allergens, and I’ll be bold enough to say they’re way better than the store-bought kind. Heck yea! Enjoy!

Ingredients:

1/4 cup melted plant-based butter or coconut oil

1/3 cup light corn syrup

2 tsp peppermint extract

3 cups powdered sugar

1 cup dairy-free chocolate chips

1 Tablespoon vegetable shortening

Crushed peppermint candy canes, if desired

Directions:

1. In a stand mixer with the paddle attachment, mix the wet ingredients. Then, slowly add the powdered sugar.

2. Move the mixture to a clean surface with wax paper and knead with your hands until it's a uniform ball.

3. Using a spoon and your hands, form small patties with your hands. Place them on a cookie sheet with wax paper.

4. In a microwave safe bowl, add the shortening and dairy-free chocolate chips. Microwave on high for 1 minute and then stir. Continue to do this in one minute increments until the chocolate is thoroughly melted.

5. Drop one patty at a time into the melted chocolate mixture. Use a fork to turn it and coat on each side.

6. Place the freshly dipped patty back onto the wax paper. If desired, while it's still wet, sprinkle with crushed peppermint candy canes.

7. Freeze until chocolate has hardened.

8. Enjoy!
