Baked Strawberry Donuts
Spreading a little LOVE with a sweet, allergy-friendly donut recipe! Fresh strawberries from a local farm are baked right into these, but store-bought works too! Everyone’s gonna love these. Promise.
Ingredients
For the Donuts:
1 + 1/2 cups flour
1/3 cup granulated sugar
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp pure vanilla extract
1 tsp apple cider vinegar
3/4 cup unsweetened oat milk
1/4 cup vegetable oil
1 cup strawberries (small diced)
For the Glaze:
1/2 cup strawberries (diced)
2 cups powdered sugar
1-2 tbsp oat milk
Instructions
Preheat oven to 375F. Grease a donut pan with cooking spray.
In a large bowl, mix together flour, granulated sugar, baking powder, baking soda and salt.
Add in vanilla, apple cider vinegar, oat milk and vegetable oil. Whisk until smooth. Then fold in the diced strawberries.
Spoon or pipe batter into the donut pan. The batter should just about reach the top of the pan.
Bake at 375F for 10-14 minutes or until the donuts spring back when you touch them. Let cool in the baking pan for only a few minutes and finish cooling on a wire rack.
To make the glaze, add the strawberries, powdered sugar and one tablespoon of the oat milk to a food processor. Process until smooth. Add more oat milk or water if you need to thin out the glaze a bit.
Drizzle glaze on the donuts and let sit for a bit for it to set. Donuts are best eaten on the same day.
