Baked Strawberry Donuts

Spreading a little LOVE with a sweet, allergy-friendly donut recipe! Fresh strawberries from a local farm are baked right into these, but store-bought works too! Everyone’s gonna love these. Promise.

Ingredients

For the Donuts:

  • 1 + 1/2 cups flour

  • 1/3 cup granulated sugar

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1 tsp pure vanilla extract

  • 1 tsp apple cider vinegar

  • 3/4 cup unsweetened oat milk

  • 1/4 cup vegetable oil

  • 1 cup strawberries (small diced)

For the Glaze:

  • 1/2 cup strawberries (diced)

  • 2 cups powdered sugar

  • 1-2 tbsp oat milk

Instructions

  • Preheat oven to 375F. Grease a donut pan with cooking spray.

  • In a large bowl, mix together flour, granulated sugar, baking powder, baking soda and salt.

  • Add in vanilla, apple cider vinegar, oat milk and vegetable oil. Whisk until smooth. Then fold in the diced strawberries.

  • Spoon or pipe batter into the donut pan. The batter should just about reach the top of the pan.

  • Bake at 375F for 10-14 minutes or until the donuts spring back when you touch them. Let cool in the baking pan for only a few minutes and finish cooling on a wire rack.

  • To make the glaze, add the strawberries, powdered sugar and one tablespoon of the oat milk to a food processor. Process until smooth. Add more oat milk or water if you need to thin out the glaze a bit.

  • Drizzle glaze on the donuts and let sit for a bit for it to set. Donuts are best eaten on the same day.
