Copycat Olive Garden Minestrone Soup
Cozy, comforting and cooked in your Crockpot, you’ll be making this one again and again. Pair it with homemade breadsticks and a salad to bring yourself back to those never-ending bowls you love at Olive Garden.
INGREDIENTS
2 tablespoons olive oil
3/4 cup onion diced
1/2 cup celery sliced
1/2 cup carrot coins
1 zucchini halved and sliced
2 teaspoons minced garlic
salt and pepper to taste
1 14 ounce can diced tomatoes
4 cups vegetable broth
1/4 cup tomato paste
2 teaspoons Italian seasoning
1 15 ounce can small white beans drained and rinsed
1 15 ounce can kidney beans drained and rinsed
1/2 cup frozen cut green beans
1/2 cup small shell pasta
2 cups baby spinach leaves
INSTRUCTIONS
Spray slow cooker lightly with cooking spray
Add all ingredients except pasta, spinach and parsley
Cook on low for 4-6 hours, or on high for 2-3 hours
Stir in pasta and spinach and cook an additional 20-30 minutes
Serve and enjoy!
