Copycat Olive Garden Minestrone Soup

Cozy, comforting and cooked in your Crockpot, you’ll be making this one again and again. Pair it with homemade breadsticks and a salad to bring yourself back to those never-ending bowls you love at Olive Garden.

INGREDIENTS

  • 2 tablespoons olive oil

  • 3/4 cup onion diced

  • 1/2 cup celery sliced

  • 1/2 cup carrot coins

  • 1 zucchini halved and sliced

  • 2 teaspoons minced garlic

  • salt and pepper to taste

  • 1 14 ounce can diced tomatoes

  • 4 cups vegetable broth

  • 1/4 cup tomato paste

  • 2 teaspoons Italian seasoning

  • 1 15 ounce can small white beans drained and rinsed

  • 1 15 ounce can kidney beans drained and rinsed

  • 1/2 cup frozen cut green beans

  • 1/2 cup small shell pasta

  • 2 cups baby spinach leaves

INSTRUCTIONS

  • Spray slow cooker lightly with cooking spray

  • Add all ingredients except pasta, spinach and parsley

  • Cook on low for 4-6 hours, or on high for 2-3 hours

  • Stir in pasta and spinach and cook an additional 20-30 minutes

  • Serve and enjoy!
